(And, no, I’m not ready to talk about it yet, or tell you what character inspired it, but when I am, you’ll be the first to know!)
APPLE-THYME MEAT LOAF
Heat oven to 400 degrees
Sauté in a little olive/canola oil for 4 or 5 minutes:
- Chopped medium onion
- 3 or 4 chopped garlic cloves
In small bowl mix together:
- 1 large egg
- 1/2 t salt
- 1 Tbsp. mustard
- 1 Tbsp. Worcestershire
- About 2 Tbsp + fresh thyme (Much less if you’re using dry.)
- Pinch of chipolte chili powder
- About 1 Tbsp. oregano
In larger bowl, mix with fork:
- 1 lb. Lean ground turkey
- 1 chopped apple (with peel)
- 1/2 C unseasoned breadcrumbs
- 1/2 C Greek yogurt (fat free is fine)
- Onion — garlic mix
Add: Egg mix
Form 2 loaves (for shorter cooking time) and bake about 35 – 40 minutes in foil lined pan for easy clean up. (Adjust time if you bake as one loaf.) Let rest a few minutes and serve.
