SMASHED POTATOES

You know how those Hollywood people are about weight. They really need to watch their figures. On the other hand, neither Georgie nor Bram is ready to give up their potatoes, so they stole this recipe from our friend The Pioneer Woman — Ree Drummond. Ree isn’t known for healthy cooking (!), but this one meets the mark. (Mr. Bill thought he’d died and gone to heaven the first time I served him this.)

Boil red potatoes (about 3 inches in diameter) until fork tender, about 20 minutes. Remove from water and place on foil lined baking sheet. Using potato masher, press down gently to “mash” each potato. Drizzle a scant teaspoon of olive oil on each potato, add salt and pepper, herbs if you wish. Bake on BOTTOM SHELF of oven until golden brown and crisp. Maybe 20-25 minutes at 450. No sour cream, friends! No cheese! You already have healthy olive oil. (Sorry to be such a nag.)
